Those fresh pasta with semi-perforated surface extruded from bronze-die look absolutely gorgeous and beautiful. Very light in color and with porous surface makes the starch from semolina easily comes out when cooked with salted water which will become the crucial foundation for all pasta sauces: the velvety and creamy starchy goodness called pasta water. 😍
