Amazing recipe! Best I’ve ever tried. Neck bones were a big plus. The only thing I changed was not adding straight sugar. I used ketchup instead.

Italian sauce varies by region. Also, some call it gravy and some call it sauce. My Italian parents made their sauce differently. They made theirs with meatballs, braciole, and sausage. Meatballs were never baked in the oven. The fond from the meatballs, braciole and sausage, lended so much flavor to the sauce. What I do is in a stainless steel pan after searing all the meats is put a splash of red wine and release the fond from the pan and pour it into the big pot of sauce. It did simmer on the stove for several hours. Thank you for sharing a version of sauce.
I like to skip the sugar and add a carrot, kids used to wait for the carrot. 😅
