Watch along as you learn how I make my grandmother’s Italian Stuffed Eggplant recipe, and the steps on how to prepare the meal, and cook it.
I will start with the ingredients/recipe. Then will move onto the preparation and cutting of the vegetables. Cook the stuffing over the stove, as well as filling the eggplant and putting it in the oven at 375 for 1 hour. 30 minutes will have foil over the top, and the last 30 minutes without foil. I have made this dish for family members and friends, and it is simply one of their favorites

This is almost a completely VEGAN dish (only excluding the parmesan cheese). It is in fact 100% Vegetarian!! AND 110 DELICIOUS!
