When I was a kid and even now my grandma makes a very similar meatloaf, stuffing included (ham, cheese, rarely but boiled eggs and sometimes chorizo) but instead of baking it, she cooks it in a pot with cooking wine and tomato sauce. We're not Italian but maybe it was brought by Spaniards to our country. I'm going to give the baked version a try.
I asked my mom and in Cuba we call it pulpeta.
I make mine almost like the first one – Pork & Beef and I stuff it with ham and provolone. My Dad taught me this way. This is my go to recipe whenever there is a meal train and it ALWAYS gets raves!!! I don't cook it in parchment or add olive oil and wine, but I think I'm going to try that now!

Could i ask a completely unrelated question? How would Eva keep homemade fresh filled pasta? I won't have time around the holidays and i want to serve my family tortellini in brodo. Can i freeze it? What would you advise?)
I have been following this site for years and love it and them, but………………….
Even the great Barefoot Contessa who I adore but who measures salt (and a very dubious one is being used here) by the shovel load, would be impressed by how much salt she is putting in the dish – I mean she is not boiling pasta for Christ's sake.
Now, I have to be very careful here 'cause I seriously do not want to veer into the realms of racism – you know what I mean:
"I'm not a racist but…" followed by an utterly racist remark.
But the Americans do love their salt! And you have not watched this video unless you love food, so you know why this is the reason ie. "Ingredients , dear boy, ingredients!).
I suspect that this site is geared to Americans. I am a very, very lucky Irishman who travels to Italy every year to visit my many Italian friends there (my Italian leaves a lot to be desired but it is certainly better than their English) and they cook for me. You should know that to be invited into an Italian home for a meal is quite an honour. Anyway, they would never use so much salt – it would be anathema to them.
Nonetheless this is a brilliant recipe so, if you are European, do try it but use at least half the amount of salt.

I have made "stuffed meatloaf" for years. I do not know where I originally saw the recipe. One difference, I use whole hard boiled eggs, wrapped in ham and cheese. It looks really interesting when you slice it. I have also stuffed them with sauteed mushrooms and cheese. What I did not know was Eva's technique with parchment paper. I will definitely have to try it.

What I love about Ava & Harper is that they not only share the recipe on the video, but they put the recipes down below. I think that's super generous considering they have a WONDERFUL cookbook as well!! Brava!! Graci! The cookbook is wonderful.. much more than that, it's like a beautiful story seasoned with love.

Love the Calabrian stuffed Meatloaf version….FYI many Midwest Meatloaves are stuffed with cheeses peppers, mushrooms and tomatoes….Would love to try the harvest version with squash! We are the home of the Juicy Lucy stuffed burger…..stuffing ground meat is wonderful!
I made this after watching your video – so glad I watched as even though I have your recipe book it was a lot easier after your demonstration – absolutely brilliant, turned out just like the picture !! it was really tasty and will be fabulous cold too with some salad – thank you Eva (and Harper!)
I made something like that in late 80s early 90.. I stuffed my meatloaf with ham and Swiss cheese.. haven't thought about that in all these years.

Oversight? When you guys started your channel it was about 'grammar' regarding the rules of pasta, what kinds, etc. However, the other half of the grammar 'rules' is the sauces. Certain sauces go with certain pastas. Did you guys ever do one of those videos (about the 'rules' of sauces and which ones go with which sauce?) Maybe you did? I just can't find it. Or, perhaps it's time to revisit this subject? Just a suggestion and thanks for the great content with each video.
how years and Eva cannot even pronounce: eggs? she still says E G G Z U H. as an intelligent italian that has learned english..WHY…speak this way? Can you not just say: EH GZ. eggs! Harper you to are the opposite of this, you sill sound like some little white girl in boston looking for first ave to intersect with your dumb brain. IF any of you..Eva or Harper are going to embrace culture and language….DO IT!…please do it . Stop fucking around sounding like a reettaarrdd!
I made this recipe last Sunday. I didnt hace anything but chedddar and parmesan cheese. But what I thought was fantastic is roasting the vegetables with garlic cloves surrounding the meatloaf. I learned years ago that meatloaf is best baked formed like this instead of a loaf pan. I had a go to recipe for meatloaf but this beats it. I cant wait to get the stuffing ingredients you used to try this again. The meatloaf is gone but I'm still eating the vegetables. They are so tasy and are even tasier the following day/days. Thank you!
I take a pack of ramen noodles. Only the noodles thats important. Break them up and toast them and then crush them and use them like bread crumbs. I believe it makes the best meatloaf.
