#53 of Forgotten Italian Classics: Panada Begamasca (Bergamo)
Someone from Bergamo told me about this soup after I shared pearà veronese. “We have our version too,” they said “just bread and water.” At first, it sounded too bare to be real, but that’s exactly what made it special. In Bergamo’s valleys, panada was the first thing put on the stove when someone was weak or recovering. Bread, water, garlic, and a bit of fat, nothing more, yet enough to comfort. It wasn’t food for showing, it was food for caring.

We have a German version of this in the county of Franconia 🙂 but we make it with “Gewürzbrot“. The spices like fennel and caraway seeds from the bread give the soup some more flavor and make the digestion easier. It used to be considered poor people food or something for farmers but I still like it a lot when my grandma makes it 🙂 it was also a good way to use up old bread after the war

In Brescia we make "panada bresciana". It's the same thing, essentially, but you must add a couple of bay leaves while cooking the bread in the broth.
