We just made the best calzones ever, and my little kutchen supervisor Lily was in charge the whole time! We’re stuffing these with a delicious, cheesy filling. chicken thighs or turkey sausage plus mushrooms. All marinated in my favorite Japanese BBQ sauce Ebara Golden Taste, the cheese pull is absolutely epic. And they’re huge! 😅
For the Japanese BBQ Meat Filling
• Chicken, thinly sliced
• Shiitake mushrooms, sliced
• Turkey sausage, casings removed
• Your favorite Japanese BBQ Sauce (like Ebara Ogon no Aji) Gold labeled
For the Veggie Mix
• Beef Tallow (or cooking oil)
• Shallots, thinly sliced
• Red Bell Peppers, use mandolin prefer
For the Cheese Filling & Assembly
• Pizza dough
• Tomato Paste Spread thin
• Ricotta Cheese, also spread.
• Parmesan Cheese
• Fresh Mozzarella
Marinate & Cook Meats: Marinate the chicken in Japanese BBQ sauce. In a hot pan, sauté the marinated chicken, shiitake mushrooms, and or turkey sausage. Not until completely cooked, because it’s gonna bake still. Set aside.
Fry Veggies: In the same pan, melt beef tallow and sauté the thinly sliced shallots and red peppers until soft. Set aside.
Prep the Dough: Roll out your pizza dough into large ovals. Spread a thin layer of tomato paste.
Layer the Fillings: On top of the tomato paste, spread a layer of ricotta cheese. Add the partly cooked meat and mushroom mixture, the pepper and shallot mixture, parmesan petals , and fresh mozzarella.
Fold & Bake: Fold the empty half of the dough over the fillings and finger stab it into a ridged close. Cut a few vents in the top to allow steam to escape.
Bake: Place the calzones on a high heat parchment-lined baking sheet, give them a light spritz of oil, and bake at 400°F (200°C) for 20-25 minutes, or until the crust is golden brown and cheese is melted.

Mmmh. Are they big enough? Im not sure we could make them any bigger 😅 I preferred the turkey sausage version but both amazing. Recipe in description. Except dough, we just used warm water, sugar, yeast.
