This Anchovy Butter Pasta (Burro con Alici) recipe is an intensely flavorful, foolproof dish.
A classic cucina povera recipe, where pungent anchovies melt into nutty butter, to create a buttery coating that perfectly clings to each strand of spaghetti.
Finished with a bright squeeze of lemon, salty Pecorino, and parsley, this is an unbelievably fresh and balanced meal, perfect for a quick weeknight dinner.

INGREDIENTS:
300g / 10.5oz spaghetti
7 anchovies in oil
100g/ 3.5oz butter
Pecorino Romano (optional)
1 lemon (optional)
A fresh bunch of parsley, chopped (optional)
METHOD:
1) Bring a large pot of water to the boil and add 1 tablespoon of salt. Cook the spaghetti according to the package instructions, stirring occasionally so it doesn’t stick.
2) While the pasta cooks, place a medium pan over low heat and add the butter. Once it melts, increase to medium heat and add the anchovies. Stir gently, breaking them down with a wooden spoon until they dissolve into the butter. Bring the heat back down to low.
3) If using lemon, add the zest directly into the pan along with a pinch of parsley. Stir quickly to release the aromas.
4) When the pasta is ready, reserve a mug of pasta water, then using the colander, transfer the pasta straight into the pan with the sauce.
5) Toss well with tongs to coat every strand. Add a splash of the reserved pasta water to emulsify and make the sauce creamy, continuing to toss until the pasta is glossy and well coated.
6) Turn off the heat, add Pecorino Romano and finish with more parsley. Toss once more, then serve immediately.
HOW TO SERVE:
Don’t be afraid to add pasta water to your pan. The pasta water helps emulsify the sauce, making it luscious and ensuring your pasta is never dry.

Thank you for mentioning cheese is OK with seafood in some dishes. I can't stand when people get bent out of shape over it. In fact, there are several old school dishes which include both cheese and seafood. Question: Where can I get that portable burner you use? I like to do heavy frying outside and this would be perfect. Thanks!

Vincenzo i say you need confidence in the word Anchovy but you know what i have had Tuna Omelettes now then and their wonderful and you couldnt get any fisher then that so do this Anchovy Butter Pasta if the Anchovy makes the taste more Unami i believe you. Im going next time im at the Canned/Jarred aisle of Coles im going to have the confidence in picking up that Can/Jar of Anchovies cheers Mate.

This is my emergency pasta dish. I’ll make it at night rather than raiding the frig. I’ll also add shallots, shrimp and a bit of garlic for day- time meals. So yummy and light. Italian traditional food is based on the KISS principle- Keep It Simple Stupid! My mama cooked in a fireplace – no stoves.

Geniale questa ricetta, molto simile agli "spaghetti con bottarga" (ma la bottarga è più rara a trovarsi e mooooolto più costosa delle acciughe). Grazie per questa variante più economica e certamente gustosissima!
