  1. This recipe is a variation of a classic dish from south Italy called "Pasta all'assassina" (Assassin's pasta) and the execution is exactly like that. You are meant to half frychar the pasta at the beginning and then finish it with tomato water, like a risotto. The original recipe isn't meant to be particularly spicy but modern version are. (The origin of the name is unclear, obviously, some theorize it comes from the unique way of frying the pasta that it looks like "pasta assassination" and a few other say it's so because of the concentrated tomato giving the dish a "blood red" color).

  2. Not a particular dish I would enjoy, crunchy noodles give me the jeebies – but good job on putting some sauce in the water. I do the same, started doing it instinctively ever since I realized that noodles absorb water and water absorbs flavor. Really does change how I do my pasta now. I often make chili pasta using this technique. Hope one day I can get into a bigger kitchen and afford some pots and pans to step up my game even more. Anyway, good video 👍🏻

  8. Can someone tell me how long he cooks the pasta in his other videos? I know there are cuts in his videos but in one video (the pasta with garlic one) he cooked them quite long in the pan, so I guess he cook the pasta sometimes for just 5-6 minutes and another 5-6 in the pan?
