Let me show you how to make five soup recipes I’m making for the fall season. If you love one-pot dinners and comforting soups, then try these. I’m starting off with an easy broccoli cheddar soup. I will also show you the perfect chicken soup to make if you are looking for cold and flu relief. This video will also showcase the viral trending lasagna soup, which I make all year.

Broccoli Cheese Soup INGREDIENTS
1 Tbsp cooking oil
1 small shallot
3 cloves garlic
4 Tbsp unsalted butter
1/4 cup all-purpose flour
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp smoked paprika
1/4 tsp black pepper
(3) 14.5 oz cans of chicken broth
1 cup heavy cream
12 oz cheddar cheese
1/2 cup parmesan cheese
salt to taste

CHICKEN CALDO INGREDIENTS*
1 bone-in split chicken breast
1 medium carrot
1/2 celery stick
1/2 small onion
7 cups chicken broth
1/2 small cabbage
2 medium potatoes
2 fresh corn on the cob
1 medium zucchini
salt & pepper to taste

*MEXICAN RICE INGREDIENTS*
1 cup long grain rice
1/4 of a small onion
1 Tbsp chicken bouillon
1/2 tsp ground cumin
1/2 tsp cracked black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
8 oz tomato sauce
16 fl oz water or low sodium chicken broth

LASAGNA SOUP INGREDIENTS
12 oz box lasagna pasta sheets
1lb mild Italian sausage
1 lb lean ground beef
1/2 medium onion
2 cloves of garlic
1 tsp salt
1 tsp cracked black pepper
2 tsp Italian herb blend
1 1/2 Tbsp tomato paste
2- 14.5 oz cans Swanson beef broth
24 oz jar of your favorite pasta sauce
24 oz water (I used the empty pasta jar to measure)
1 1/2 tsp sugar
1 cup heavy cream
•season and salt soup to taste*

*Ricotta Cheese garnish*
15 oz Ricotta cheese
4 to 5 oz fresh mozzarella cheese
1 Tbsp fresh parsley
1/4 grated parmesan cheese

INGREDIENTS FOR TORTELLINI SOUP
1 lb lean ground beef
1 small onion
2 cloves garlic
2 tsp Italian dried herb blend
1/2 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp crushed red pepper flakes
15.5 oz jar or 2 cups marinara sauce
4 cups beef broth
2 cups water
5 oz fresh baby spinach
salt & pepper to taste
1 cup heavy cream
salt & pepper to taste

PASTA E FAGIOLI INGREDIENTS
5 slices of bacon
1/2 medium onion
1 celery stick
1 medium carrot
2 cloves garlic
1 lb of 90/10 lean ground beef
1 Tbsp dried Italian herb blend
1/4 tsp dried thyme
1/4 tsp crushed red pepper flakes
15 oz crushed tomatoes
5 to 6 cups chicken broth (I used Swanson’s brand chicken broth)
1 dried bay leaf
15 oz can small red beans (drained)
15 oz can cannellini beans (drained)
6 oz ditalini pasta (or small elbow macaroni)
salt, pepper, and season to taste
garnish with fresh parsley, grated parmesan, and extra crushed red pepper flakes

  5. My boys don’t eat soup. They will eat chili and spaghetti with different types of noodles. And it’s only my kids and I. I’m a single dad so I don’t cook soup just for myself.

  7. I would be tempted to cook the tortellini separately and then add it in as i'm serving it. The main reason I don't like pasta soups is the pasta always seems to get too slimy when it sits in liquid for too long. These all look delicious

  12. I don’t ever break up the ground meats. Instead I make small meatballs. It’s a texture issue. The only way I can tolerate it is in lasagna or my hamburger helper every 10 years or so.

  18. I used make garlic soup. It's been a long time since I've made it so I don't remember exact measurements. But basically, you use chicken broth, add 20, 30 or 40 crushed garlic cloves (depending on how much you love garlic and size of garlic). Simmer for 20 minutes. Remove garlic pieces or not, your choice. Take a couple of eggs, beat well and pour gradually and slowly into the broth while it simmers a bit more. It's delicious and really good if you have a cold.

  19. Is evaporate milk considered heavy cream? You mentioned that you added whipping cream to the lasagna soup. Do you alternate between the two at times?
    These soups look so delicious! I’m like you, a good soup doesn’t have to be eaten only during cold weather. Maybe they’re more comforting then but why deny ourselves! One of my favorite soups is cheesy potato soup or potato soup without the cheese. Both are delicious. Thanks for sharing your recipes.
