  1. Pasta Arrabbiata Recipe
    Ingredients
    – 2 liters water
    – Salt as required
    – 1 cup pasta
    For the sauce:
    – 2 tablespoons olive oil
    – 1 tablespoon chopped garlic
    – 2 teaspoons spicy chili flakes
    – 3 tomatoes, halved
    – Reserved pasta water as required
    – 1/2 cup tomato purée
    – Salt to taste
    – 1/2 teaspoon crushed black pepper
    – 3-4 fresh basil leaves or 1 tablespoon chopped parsley
    To finish:
    – 1-2 tablespoons cold butter
    Method
    1. Boil the Pasta:
    – Bring 2 liters of water to a boil in a large pot.
    – Add a generous amount of salt to the boiling water.
    – Add 1 cup of pasta to the pot and cook until al dente, following the package instructions (usually about 8-10 minutes).
    – Reserve some pasta water (about 1 cup) before draining the pasta.
    – Drain the pasta and set aside.
    2. Prepare the Sauce:
    – Heat 2 tablespoons of olive oil in a large pan over medium heat.
    – Add 1 tablespoon of chopped garlic and sauté until fragrant, but not browned.
    – Add 2 teaspoons of spicy chili flakes and sauté for another 30 seconds.
    – Add 3 halved tomatoes to the pan. Pour in some reserved pasta water, then cover and steam until the skins can be peeled off, about 5-7 minutes.
    – Remove the skins from the tomatoes and mash them up in the pan.
    3. Cook the Sauce:
    – Add 1/2 cup of tomato purée to the mashed tomatoes and more reserved pasta water as needed. Stir well.
    – Cover and cook until the tomatoes have completely broken down and the sauce has thickened, about 10-15 minutes.
    4. Combine Pasta and Sauce:
    – Add the cooked pasta to the sauce and toss well. Add more pasta water to adjust the consistency if needed.
    – Stir in 3-4 fresh basil leaves or 1 tablespoon of chopped parsley.
    5. Finish the Dish:
    – For a restaurant trick, add 1-2 tablespoons of cold butter to the pasta and toss well until melted and incorporated.
    6. Plate and Serve:
    – Plate the pasta and garnish with some fresh basil.
    – Serve immediately.
