  1. the trouble is that it is exceedingly difficult to get fresh white truffle in most of the world – black truffle or truffle from a glas is pretty useless. I have tried.

  2. Book ordered, looking forward to reading your recipes. This salami was great, no curing salts, the salinity from the plain salt and acidity from the wine creates an environment that unwanted bacteria cannot survive in. Such a good recipe, tutorial and video, thank you 🥰.
