Here’s a classic nougat recipe:
*Hailing from Cremona*: Italian nougat, or torrone, originated in the city of Cremona in the Lombardy region…
## Ingredients:
– 200g granulated sugar
– 120g Honey & light corn syrup
– 1 tsp vanilla extract
– 1/4 tsp salt
– 50g almonds,
– 50g Pistachio (walnuts or hazelnuts)
– 60g dried fruit (cranberries, cherries, or raisins)
## Instructions:
* Line a 9×6-inch baking dish with gracing & parchment paper.
* In a medium saucepan, combine the sugar, Honey. Place the saucepan over medium heat and stir until the sugar dissolves.
* Bring the mixture to a boil, then attach a candy thermometer to the side of the saucepan.
* Cook the mixture to 300Β°F (150Β°C), or the hard-ball stage.
* Remove the saucepan from the heat and carefully.
* In a separate bowl, add two egg whites and beat with the help of a beater. While beating, you have to keep adding the sugar-honey mixture to it. You have to beat it until it reaches a sticky texture.
* Let the mixture cool slightly, until it reaches 275Β°F (135Β°C).
* Add the vanilla extract and salt, stirring to combine.
* Stir in the nuts and dried fruit.
* Pour the mixture into the prepared baking dish and smooth the top.
* Let the nougat cool and set at room temperature for at least 05 to 06 hour.
* Once set, remove the nougat from the baking dish and cut it into small pieces.
## Tips:
– To ensure the nougat sets properly, it’s crucial to not stir the mixture too much, as this can cause it to become grainy.
– If you don’t have a candy thermometer, you can test the mixture by dropping a small amount of it into a cup of cold water. If it forms a hard ball that doesn’t flatten when removed from the water, it’s ready.
– Nougat can be stored in an airtight container at room temperature for up to 2 weeks.
