Ingredients
* 4 medium-large potatoes
* 50g grated Parmesan
* 200g all-purpose flour
* 300g water
* 1 tbsp olive oil
* 1 tsp salt
* Rosemary
Directions
* In a bowl, mix the flour, water, oil, and salt to create a batter.
* Thinly slice the potatoes using a mandoline and stir them into the batter.
* Pour the mixture onto a baking sheet, making sure the potato slices are in a single layer without overlapping too much.
* Top with grated Parmesan, rosemary, and a drizzle of olive oil.
* Bake at 200°C (390°F) in a fan-assisted oven for 35 minutes. For an extra crispy finish, you can use the grill setting for the last 5 minutes.
