A classic Italian dish that I love making. The “caccia” in cacciatore means “hunt,” so I guess this is chicken hunter’s style. It’s been an Italian-American favorite for years and a dish with roots going back to the Renaissance. This dish is good made with a whole chicken, but I prefer it made with drum sticks and thighs only. It’s great with polenta or some pasta, but I love it with a chunk of crusty semolina bread.   4. This is a dish I do love, but never had growing up. I'm not sure if it was because my parents were from different regions of Italy, or that it was too "American" with the added tomatoes…or that my mom just didn't like it (stemming from the faces or comments she makes when I order it in a restaurant). I do love it, though, and gonna try to make.
