Wow! Thank you! This is a great review video. I liked watching it even more with your commentary. It added a lot to the video. This place and their recipes look amazing and you can tell they are so passionate about what they are doing. I definitely think they could charge more and probably should with the work that goes into each dish and with the rising costs of ingredients. They deserve to profit and not just break even or have enough to keep the lights on. I hope I can visit and eat there. 🙂
Great video. I appreciate this chef's attention to detail, both preparing food and educating the audience. I do not blame you for not wanting a restaurant. There is so much pressure to keep customers happy, to attract, train and retain good employees, to find the best ingredients and make the best dishes with them, and last but not least, to keep it profitable. It is a balancing act that I do not envy. In the NYC marketplace, the start up costs of a restaurant run from hundreds of thousands to millions of dollars, and the average lifespan of a restaurant in NYC is less than 5 years. Think about the risk.
Tradicion is fine and don't mess with it. BUT I am all for peple experimenting with their own creativity creating new dishes so life does not become a never ending rutine.

I agree with the steakhouse comment. But rest assured, after watching multiple Italians cook steak/s… It's the same suffering you face when Americans butcher pasta 😅 lol.

Hi Vincenzo! I think the standards for Italian cooking in America are still quite poor. I'm not talking about low-hanging fruit like the Olive Garden, which is chain restaurant food and it is what it is. But even the supposedly "high-end" restaurants have no shame about serving pasta from a box if they can put a gigantic expensive steak alongside it. This is not what Italian cooking is about. I've had much better pasta in Germany (Germany!) at a little place where the Italian mother made two types of pasta from scratch with different sauces. That was it, that was the entire menu. Two dishes, cooked perfectly. Her two sons worked as the waiters. It was glorious. We've really lost the plot here in the USA.

Just beautiful! Such passion and attention to detail. I could not believe he was hand rolling the pasta. I have my mother’s rolling pin, it’s about 100 years old. She would it roll out the dough and hand cut the pasta.
I worked in kitchens for decades and I have my own passions when it comes to food. My gran taught me on a woodstove when I was five. I have a weakness for pasta dishes and this young man made my mouth water with each one of his creations. I would definitelt try his dishes if I was there.
In Paris, a "regular" croissant costs between 1 and 2 €. I would be ready to pay up to 5€ for a really good croissant. The price of a croissant is only in the know-how and the number produced at once. In Paris, 20€ for a croissant, that would be a rip-off!

This is why I don’t go out. I’m not paying ridiculous money to eat, nothing. I cook and I think you should be fed. If you are concerned about art, open an art gallery, not a restaurant where people are to be fed.
Every dish is a work of fusion and experimentation. One day maybe people like vicenzo will understand that
