Ingredients:
900g semi-strong bread flour or 00 flour
25g sugar
16g yeast
18g salt
650g cold water
66g olive oil
Set oven to 450, preheat oven steel inside.
1. Mix flour, sugar, and yeast
2. Dissolve salt into water and add to flour mixture. Mix until combined
3. Knead, slowly adding the olive oil as you go until all oil is incorporated and dough passes windowpane test.
4. Cover and let rise for 20 minutes in warm place.
5. Punch down
6. Cover and let rise again for 20 minutes
7. Divide and roll into tight balls (128g each)
8. Roll until approximately 1/3 inch wide
9. Let sit on counter for 10 minutes to form skin
10. Place on preheated baking steel and bake until puffed up, once puffed, flip and allow to bake for another 30 seconds
