🍆 This recipe is a real greeting from sunny Italy! It was passed on to me by my grandmother, who lived in a small Italian town by the sea. Every summer, when we came to visit, the kitchen smelled of fresh herbs, olive oil and eggplants.
🔥 Now I cook eggplants according to this recipe almost every day. It is simple, affordable and incredibly delicious. Suitable for dinner, a side dish or even a light snack. Add a drop of love and a pinch of basil – and you are in Italy!

📌 Ingredients:

3 Eggplants
Olive oil
1 Onion
2 stalks of celery
Parsley
1 Tomato
Capers (to taste)
Tomato sauce 400 ml.
5 cloves of garlic
Cheese 150 g / 5 oz
Pasta 250 g / 9 oz
Salt 0.5 tsp.
Black pepper 0.5 tsp.
Dried basil 0.5 tsp.
