Hereโ€™s the recipe:

Ingredients:
4 chicken thighs
4 chicken legs
2 bell peppers, sliced
1 cup carrots, peeled and cut into small pieces
2 cups frozen peas
1 onion, chopped
1 can (14 oz) diced tomatoes
1 (8 oz) can tomato sauce
1/4 cup red wine
3 cups of rice (to be cooked according to directions)
4 medium potatoes (cut into quarters)
1/2 cup fresh parsley, chopped

For the Salad:
4 cups romaine or green leaf lettuce
1/4 cup parmesan cheese, grated
Juice of 1 lemon
Olive oil, salt, and pepper

Directions:
In a large skillet, brown chicken thighs, then add bell pepper, carrots, potatoes, frozen peas, fresh parsley, onion, diced tomatoes, and tomato sauce; simmer for 90 minutes in a partially covered pot. For the salad, toss lettuce with lemon juice, olive oil, salt, pepper, and parmesan. Serve chicken cacciatore with potatoes, peas, carrots, and peppers over cooked rice, along with a refreshing side salad.
