It is so good! I had this potato ravioli once at a restaurant in Firenze and I want to go back there and eat that again so bad! One day I hope to make it myself as I found a couple recipes. It was soooo good!
Also, had some potato filled breaded sticks (like a mozzarella stick but potato and that was the most delicious thing. We went to an outdoor market for a school assignment and some of my guy friends had bought them. Asked if I wanted one and so I tried it. I loved them so much and they let me have the rest of the bag which I happily took
But I also had some really great Spaghetti at another restaurant… And of course Gelato…

Spent a week in Rome eating the moste boring food I have every experienced. Italians think that changing the shape of the pasta they put their sauc on produces another dish.

Unless you taste the food personally, in Italy, you have no idea just how delicious Italian food can be. The land, sea, and just the cuisine itself, all contribute to the exquisite nature of food in Italy. It is an art form there.
Sometimes I prepare cinghiale and polenta, there want four hours to cooking cinghiale. Take a large pot with high edges, like the one where you prepare pasta, put in some olive oil, inside the cinghiale, at least a chilogram of meat, it must rosolating and to take a clear color, ( cinghiale has a red meat, so it is easy to know when it is pre-cooked enough….) now, pour in a litre of a good wine, the wine must cover the meat, so, if one litre is not enough add another some.
In the first 3 hours the cooking must be to slow fire, the lid must leave a gap, use a wood spoon, every 30 minutes shake slowly. After 3 hours put inside a litre of tomato and leave cooking for one hour again, always to low fire, then off the fire and make rest for at least one hour. When you prepare polenta, you are ready to start to eat a delicacy, fill a dish of cinghiale and put in it 2 spoons of polenta ( you must use a big spoon ) and enjoy the whole….
If you make it enough, as happens to me, you can put in the fridge and the remaining can be used to eat with other polenta, or, to eat with pasta.
When i go to Italy i can never finish a whole meal alone hardly half and how u find space for desert?
