Recipe:1 eggplant.
Salt.
Heat a pan with 2 tablespoons of olive oil.
Fry the eggplant over low heat until golden brown.
200 g / 7 oz smoked bacon.
2 garlic cloves.
1 teaspoon oregano.
Cook for a few minutes until golden brown.
Boil 300 g / 10.5 oz of pasta.
The cooking time will depend on the type of pasta; follow the manufacturer’s instructions.
In my case, I needed 9 minutes for al dente cooking.
400 ml / 13.5 fl oz tomato sauce.
This is approximately 1.5 cups.
Cook until it begins to boil, then add the eggplant.
Turn off the heat and add the pasta.
Fresh basil.
