  1. It needs moisture to be tender. That means if you use 1&1/2 cup of breadcrumbs you should add the same amount of water or milk so the breadcrumbs absorb the moisture.

  4. The cheese he’s using… I asked an Italian lady in the market how to make meatballs and she told me to get that cheese.

  5. Misses chopped parsley and dried ferner seeds to be authentic. Some also put finely diced carrots. Be cautious with the fennel, though if you never used it before. Enjoy
