Peperonata
Recipe
5 capsicums
2 tomatoes
4 onions
5 garlic cloves
Extra Virgin Olive Oil
1 tablespoon salt
2 teaspoons sugar
Chillie flakes (optional)
Half tablespoon tomatoe paste mixed in half small glass of water.
Another small cup water to fry onions.
Add onions and garlic to pan, after 5 mins add half the salt and half the sugar with a small cup of water, added gradually, cook on low heat for approx 20mins.
Add capsicums, the rest of the salt and sugar, cover and cook for 5 mins, then add tomatoes, chill and tomato paste with water and cook for approx 45mins till water reduces and thickens.
