Here’s how you can whip this up:
Ingredients:
12 oz. ditalini pasta
1 can (15 oz) cannellini beans, drained
1 can (14 oz) diced tomatoes
4 cups vegetable broth
1 lb chicken cutlets
1 cup breadcrumbs
1/2 cup grated pecorino romano cheese mixed into the breadcrumbs
4 cups mixed greens
Italian dressing
Directions:
Cook the pasta according to the package instructions and set aside. In a pot, combine beans, tomatoes, and broth; bring to a simmer. Bread the chicken cutlets and pan-fry until golden. Serve the Pasta e Fagioli with the cutlets and a fresh salad on the side.
