I do this too with all the meats. I call it Drop Sauce because I just drop things in. I cook it for at least 4 hours. The baby back ribs just fall off the bone.
I wanna do everything you’re doing, so to be clear you put the seasoned uncooked meatballs, in the sauce. Cook for one hour and a half on simmer. Is that correct?
Ground beef can have a lot of grease/fat in it that can make the sauce greasy. I think a SHORT BAKE of them on a wire rack can eliminate a lot of grease BEFORE adding them to the sauce. That way the meatballs can still soak in some sauce while EXCESS grease can be eliminated. The sauce can still get some of that fat flavor.

I was unaware there was even ways other than this to make them. It just makes sense to cook them either in the sauce, or in the pasta water
