  3. I don't use eggs in my meatballs I find the smell of eggs lingers throughout the cooking process. I find that it's the bread crumbs that bind the mince not the eggs.
    However The ratio of bread crumbs to the mince is important 1 kgs of mince to 1 cup breadcrumbs plus grated parmesan.

  5. Nick, I wish you'd eat more on camera! You don't have to do fake aggrandised reactions like other chefs, but it's the half minute of "payoff" of the video, instead of ending as soon as you're done cooking

THIS LOOKS FANTASTIC but my italian grandmother DID just smack me upside the head from behind the grave for not stopping you from putting oil on your cooked pasta, which yes, prevents the pasta from sticking to itself but unfortunately also commits the HUGE sin of preventing the sauce from sticking to the noodles. it hurt me, nick

  9. Yes! My dad always fries the meatballs and it gives them this delicious crispy flavor that's hard to come by in restaurants
