Pasta frittata is a real thing in Naples and its left over pasta turned into frittata. This way of using left over pasta has been used by many generations. You can turn lefover carbonara into a pasta frittata but carbonara should be made the right way.

  1. I’m from the Midwest here in the US. We would just call this a spaghetti casserole. This is a casserole people would bring to Sunday potlucks. Here in the Midwest, we love casseroles and try to find as many ways as possible to combine pasta, cheese, cream, and meat.

    Seriously, though, more Midwesterners need to know about guanciale and REAL carbonara, it will change their lives. True carbonara makes hearts sing!

  2. Im sick of hearing professional chefs say "theres no right or wrong way to make something". That must be infuriating as an acual chef or even someone that simply loves and respects food, tradition and the time and effort that goes into doing something right. Nobody working in construction says "yeah just do whatever you want, theres no right or wrong way". Yeah, there is. Theres a right way to prep ingredients. Theres proper ingredients to use. Cook times. Texture, flavor profiles. This BS saying theres no right or wrong way to cook food is just a way to make people that cant cook feel comfortable with throwing anything into a dish and being satisfied with the results instead of taking the time to use years of knowledge and practice to educate people on the right way to do something

  8. Seriously, Jamie, why even invoke the word "carbonara" for this one?
    You are doing everyone a dis-service. You lose credibility, and you create confusion.
    Just call it pasta casserole or something.

  9. love your videos I like how you want to keep the original way of doing things Protecting Italian culture. America is such a mix of so many different cultures that we are going to mix things together that are not authentic or original but i think there is something to be said for honoring authentic traditional recieps

    I'm only a hobby cook but even i would never use freaking ham or bacon for Carbonara.

  14. This is not for me. I would never go into his Italian restaurants because I did not think they were genuine. I would rather have spaghetti carbonara instead.

  15. Do your version. Do his version. Do a blind taste test with some random people. Is it carbonara, no. Is it aimed at UK granny? Yes. How does it taste? Do a test, lets find out.

  19. When i saw the dish in the thumbnail i assumed Jamie Oliver attempted a Pasta Quiche or a Pasta Casserole! But i think its the same difference.

  20. It is not surprising why Jamie Oliver had to file for bankruptcy in 2019 and close more than 20 of his restaurants. Maybe he should try to make good food.

  21. Italian cuisine is sacred. Why do some wannabe chefs keep trying to destroy it? As someone with deep Italian roots, this makes me very angry.
