  1. How does wine make the sauce ‘creamier’? Of all the ingredients, the tomatoes, pasta water, mussle juice, and starchy pasta water would all thicken the sauce; the wine might be the only ingredient that WOULDN’T make the sauce creamier.

  2. Ok but if it’s done in 60 seconds seems impossible cos the seafood would need 2-3 mins like you did, looks great just clock bait which leaves an unpleasant taste
