Never use canola oil , vegetable oil or sunflower oil., they're extremely inflammable and bad for your health use avocado oil instead and if you don't have avocado you can use olive oil , but is going to change the flavor a little bit that's all.. and don't forget the vinegar without white vinegar it's not a real chimichurri
