  1. Good recipe. For people with kids, you may wish to cut the chicken filets in half (lengthwise) because they are much more easy to handle when smaller, when frying. Also, a finer ground of parm works better for coating the crust. The long pieces of parm kinda fall off and "dirty" the oil too fast.

  3. I've found that, instead of having the flour and egg separate, you are essentially forming a batter on the chicken when you dredge in one than the other. So, mix the flour and egg together to form your own batter, coat the chicken, then dredge in the breadcrumb mixture.

  5. Im going to try this recipe this weekend. Do you make your own Marinara sauce or do you buy it already prepared? If you buy it prepared do you have a favourite brand?

  6. Delicious! I find that you can drain and freeze the fried cutlets, then bake them with the sauce and cheese later. Great for new moms and dads as a food gift. (I freeze on a sheet pan then vacuum seal bag them after freezing)

  8. JOHN: Try doing the same with pork chops ie instead of the flour/parsley/parm plate use a box of Sage & Onion stuffing instead – delish!!!
