Italian style Lentil & pasta soup is a classic hearty soup. It’s simple, easy to make, only requires one pot and it’s healthy too! When it comes to making it there is not really one set recipe. Any number of different vegetables can be used, depending on what you have to hand.
In this recipe I used low fat bacon (which is completely optional of course). As it cooks it renders out a little bit of fat which allows for the pasta, veggies & lentils to take on a delicious flavour. The vegetables (celery & onion) make it a good budget friendly option along with the tinned lentils which add protein and a nice nutty flavour.
Also it’s made using only one saucepan, so it saves on the washing up.
If you don’t have fresh parsley, you could always use fresh oregano or mint or any dried herbs you have to hand. If you don’t want to use vegetable stock you could always replace it with water. After all this is your recipe.
