This is the best recipe, I've tried several others, but now I only make it according to your recipe.
Tried the first meal, the only ingredient I had available was the garlic
I followed the spirit of your recipe and it was wonderful! Used spiral pasta so it would hold the sauce. Added Linguica. Cooked it first and then used the fat as a sub for the oil. Cooked the spiral pasta about half way, took it off of the fire and let it cook the rest of the way, ish, so that it wasn't completely done when I put it in the sauce. Used baby bellos instead of white mushrooms. Could not for the life of me find fresh Tarragon. I just started sniffing my way through what I had. Landed on dried Chervil and dried Savory. When in doubt, I've found the best way to season dishes is to sniff the dish, and then sniff the herb you want to add. Your brain will say yup or nope pretty quickly. When in doubt, trust your nose.
In the end, it was a totally wonderful dish that was light and fragrant and infused with flavor. Damn, because of you and Jean-Pierre, I'm starting to know what I'm doing.
