We decided to finally take on a much requested recipe: pasta al limone, or lemon pasta. The only problem is… which one?

Yum i recently made this but it was much easier, cooked some pasta, opened a jar of Trader Joe’s lemon pesto, mixed the two, let pesto warm with pasta and walla…delicioso!

The first time we visited Capri we had an amazing lemon pasta. Basic, refreshing and so good.
2 portions of spaghetti, 3 lemons juiced, 3-4 tbs of capers (drained) and a can of flaked tuna (drained and squeezed) top with olive oil, salt and cracked black pepper to taste. Momma Mia! ❤
My wife is allergic to pine nuts. Would the lemon pesto recipe work well with pistachio pesto?
I have two suggestions for these recipes: 1. Try a Mexican-style citrus juicer, the kind that looks like an overgrown garlic press. I have tried all sorts of reamers and this tool is so much more efficient. It also strains out the seeds. Just remember that the cut side of the lemon goes down into the cup part.
2. Try a Microplane to zest the lemon. It automatically grates the peel into bits about the same size as the grated cheese, so I expect that just a quick pounding with a mortar and pestle should make your pesto nice and smooth. Just make sure you put the Microplane on top of the lemon so you can see that you are not digging into the white pith.
I have made Eva’s ragu napoletana for 8 straight weeks. Maybe the next 8 I will do lemon pasta or pesto? Yummy

I love that Eva calls finishing the sauce in the frypan "mantecare". Google says the literal translation is "cream", which is interesting because 'manteca' is the Spanish word for lard. (We actually have a town in California named Manteca, and I have often wondered why they named their town 'Lard'. 🤨😃)
Anyway, the Italians referring to finishing the sauce as to 'cream' it must be because you are emulsifying the butter and pasta water into a cream-like consistency, similar to how in English we 'cream' flour, butter, and eggs together when making a cake batter. I had never before realized that must be why we call it that. I am going to say "mantecare the sauce" from now on! 😁

If the chef's accent is phony as an Italian American, I am insulted. The recipes looked simple enough to make. I will definitely try the first recipe.

I made homemade pasta with the zest and juice to flavor the Pasta (linguine) but went way overboard with the lemon. Is there a sauce I could use that would tamp down the lemon flavor?
