1½ cups Espresso, freshly brewed
1½ tbsp (18.75 grams) Sugar, white granulated
1 tsp Vanilla Extract

For the Custard
6 Egg Yolks, large
1 cup (200 grams) Sugar, white granulated
24 oz (680 grams) Mascarpone Cheese, room temperature
1 cup (225 grams) Pistachio Paste/Cream
1 ½ cups (360 ml) Heavy Whipping Cream, cold
2 tsp Vanilla extract

For Assembling the Tiramisu
36-40 Italian Ladyfingers Cookies (Savoiardi Biscuits)

  3. An amazing idea, Wendy! Like I'm just about to make a Tarte Tatin with nashi pears. (In fact: I once had a co-worker from the south of France. And his parents had met the Tatin- sisters still in person. I was much younger. My beard wasn't white like today. And my nickname (everywhere I went) was instantly: Jesus. Now: this true 1st name was Krishna. And we had a lot of workers from Africa at that company. Yelling: "eeesus!" (=Jesus) anytime I walked past. Them, beeing mostly catholics. But guess what they thought, watching Krishna and Jesus working hand-in-hand?)
