Ingredients:
β€’ 240g Pasta (spaghetti or any pasta of your choice)
β€’ 2 tablespoons Olive Oil
β€’ 3-4 Cloves Garlic, finely chopped
β€’ 100g Capers
β€’ 100g Olives (green or black, pitted and sliced)
β€’ 50g Anchovy Fillets (drained)
β€’ 1 can (260g) Peeled Tomatoes or Fresh Tomatoes, chopped
β€’ 1 teaspoon Red Pepper Flakes
β€’ Seasoning: Salt & Pepper to taste
β€’ Fresh Parsley, chopped (for garnish)

Instructions:
1. Cook the Pasta:
o Bring a large pot of salted water to a boil.
o Add the pasta and cook according to the package instructions until al dente.
o Once cooked, drain the pasta, reserving about 1 cup of pasta water. Set aside.
2. Prepare the Sauce:
o Heat the olive oil in a large pan over medium heat.
o Add the chopped garlic and sautΓ© until fragrant, about 1-2 minutes (be careful not to burn the garlic).
o Add the anchovy fillets and cook, breaking them up with a spoon as they dissolve into the oil.
o Stir in the capers and olives, allowing them to cook for 2-3 minutes, so the flavors meld together.
o Add the chopped tomatoes (or canned tomatoes) and red pepper flakes. Stir everything together and let it simmer for 10-12 minutes. The sauce should thicken slightly.
3. Combine Pasta and Sauce:
o Add the cooked pasta to the pan with the sauce.
o Toss the pasta in the sauce, adding some reserved pasta water to help it come together if needed. Adjust the seasoning with salt and pepper to taste.
4. Garnish and Serve:
o Once everything is well coated, remove from heat.
o Garnish with freshly chopped parsley for a burst of color and flavor.
