Omg it’s 6:16 AM. Here and I want spaghetti with that sauce !! Yum 😋
I use 50% each of San Marzano & Roma tomatoes, and they all go in the blender with the paste, basil , couple tablespoons of concentrated chicken broth & a bit of nutmeg before going in the pot to meet with the onion, garlic & olive oil.

*Costco used to have big 3can packs of Cento tomatoes, not now. You think any San Marzano canned tomato is ok?
I use my apple corer to take the center of the fresh tomato out. Really quick and easy, then I quarter them.
I too have been known to just eat a bowl of sauce. Yummo. Can't wait for more recipes.

1:55 – I think that is maybe my problem also, about the raw tomatoes Joe is talking about where unless he knows it is a Heritage tomato or from a farmer's market he doesn't usually get tomatoes. Again I think that's my problem also, I don't like raw tomatoes and maybe that's why? I can eat cooked tomatoes like in a sauce or minestrone soup or in chili, or as ketchup, spaghetti sauce, etc., but I can't stand raw tomatoes, I don't know what's going on with me with that. Maybe it's because of what Joe is talking about and about why he doesn't like or buy raw tomatoes either, I have a feeling raw tomatoes here in the US are different from Italian-grown tomatoes? If Joe is going to use some raw tomatoes, however, to make a sauce I am willing to watch, listen, and learn.
4:02 – I've never heard of putting butter in a tomato sauce but it sounds good, should be interesting. Your family comes from Northern Italy? My family comes from Southern Germany and Germany is right above Italy so we are sort of "neighbors" country-wise (?), LOL. (Okay, it's a goofy joke, never mind, LOL.)
7:40 – I love the Goodfellas movie. Henry is my favorite character because he is loyal and street-smart. I also love Henry and Karen as a couple in general. I think those two are hilarious, LOL, but they are also so well suited for each other, LOL.
15:48 – You know what I do sometimes with my tomato sauce is I actually put parmesan cheese in the sauce and let them cook together. I use the parmesan instead of salt to flavor the sauce. I don't know if that's something I should be doing but I have done it in the past just as an "experiment." It came out good.

Uhhh… I'm Italian…. There's no way we would use anything but very ripe Roma tomatoes…. Your sauce would probably taste a lot better if you did!
