I recently started a new job in one of Italy’s most iconic cities. Let me take you through a regular week in (mostly) sunny Venice, and everything I ate along the way. Plus you can try out my recipe for a super simple lemon curd!

ORIGINAL LEMON CURD RECIPE:

~ * LEMON CURD RECIPE * ~

INGREDIENTS
– 2 medium or 3 large lemons
– 200g (1 cup) caster or granulated sugar
– 100g (6 ½ tbsp) butter
– Pinch of salt
– 4 eggs

INSTRUCTIONS
1) Grate your lemon zest and squeeze your lemon juice into a large heatproof bowl with your sugar.
2) Add your butter and salt.
3) Place the bowl over a pan of gently simmering water and allow the ingredients to gently melt together, whisking occasionally.
4) Crack your eggs into a separate bowl and beat them together.
5) Gradually pour the eggs into the bowl of lemon mixture, whisking constantly.
6) Continue whisking for 5-10 minutes until the mixture has warmed and thickened to the texture of custard.
7) Pour your cooked lemon curd into a heatproof jug, before pouring into sealable containers.
8) Allow to cool, then refrigerate until ready to use. It will thicken nicely into a spreadable, creamy consistency when cold.
9) Enjoy with bread, scones, cake, yoghurt, ice cream, or straight from the spoon!

This lemon curd will keep well in the fridge for up to a week, but is best eaten fresh!

This is crazy, I just saw you eat yoghurt and lemon curd on a short this morning, and I though I wonder if I could make it, but the recipe wasn't popping out from your website, and then all of a sudden here it is 😀Thanks so much Kelly, cos my head is like Carol stop with the vanilla Greek yoghurt, get a flavour variation 😉

  4. Oh my gosh. I have to make this comment. I actually had completely forgotten about this channel (no offence, there are so many channels!) but back in my yo-yo years of dieting hell (just 14 short months ago and backwards to infinity) I used to watch this channel and enjoy it but also grumble to myself silently like “oh isn’t this just CUTE” at the same time because I genuinely didn’t think eating this way would ever work for me. However I also appreciated the food eye candy, snack ideas, humor, personality and video editing, etc. so don’t get me wrong. But there were mixed feelings. Anyway – Lo and Behold. This is EXACTLY how I eat now! Day in and Day out, healthy in body and mind, in my mid 40s and peri-M in full swing (if you don’t know what that is God bless you) and – I know it’s not the point but it’s worth saying – slimmer than I was when I was 11. ELEVEN YEARS OLD.
    This is the Holy Grail of eating. It is the right way ✅ Thank you! I am going to buy your cookbook as a humble thank you for what may have been a subconscious shift for me, and also because I want to try the recipes. You’ll see that I have in just a few minutes. God bless you!!!!!!
