I’ve never used Sunchokes before, and this recipe is pushing me out from my confort zone! Jerusalem Artichoke are the root of a kind of sunflower and you can cook them just like any other root vegetable. In this pasta recipe I use Jerusalem Artichoke to make a Sauce for Spaghetti, I really miss a lot the flavour of the Artichoke that I eat in Italy, but this Sunchoke recipe get very close to that flavour.
Jerusalem Artichoke sauce for 4/5 people:
Jerusalem Artichoke: 300gr/10.5 oz
Garlic: 3 cloves
Sage: 5 leaves
Butter: 10gr/0.35 oz
Parsley: how much you prefer
Spaghetti Pasta: 400/600gr or 0.90/1.3 lbs
