They say this soup is Italian Penicillin—so when my son got sick, I had to put it to the test. Pastina soup is the ultimate comfort food, and after trying it, I get why Italian grandmothers swear by it. Simple, cozy, and packed with flavor, it’s the perfect remedy for sick days (or any day, really).
🌟 Italian Pastina Soup Recipe
Ingredients:
2 carrots, chopped
2 celery stalks, chopped
1 whole onion, chopped
4-5 cloves fresh garlic, minced
1 bay leaf
Salt & pepper to taste
½ tsp red chili flakes (optional)
A few whole peppercorns
2 tbsp olive oil
6-8 cups chicken stock (depending on how much soup you want)
¾ – 1 cup pastina (or any tiny pasta)
Grated Parmesan cheese, for serving
Instructions:
1️⃣ In a pot, heat olive oil and sauté carrots, celery, onion, and garlic with salt, pepper, bay leaf, chili flakes, and peppercorns until fragrant.
2️⃣ Add a splash of chicken stock and blend everything until smooth.
3️⃣ Pour the mixture back into the pot, add the remaining stock, and simmer for 30 minutes.
4️⃣ Add pastina and cook until tender. (make sure to not overcook as the soup will be very hot for a while)
5️⃣ Serve hot with freshly grated Parmesan cheese.

So another Nona classic is pastina which is the little stars pasta made very similar to a Chinese egg drop soup. I know that sounds crazy but it really is true. The ingredients goes as follows for one serving
-1 and a half cups of chicken stock
– half cup of water
– 1 small parm rind
-3 table spoons of pastina pasta
-1 beaten large egg with 1 teaspoon of water
If you don't have good chicken stock on hand you can use the good Knorr stock Cube of chicken bouillon and 2 cups of water. You want the total liquid to be 2 cups of liquid total whether it's from the bouillon Cube or chicken stock or vegetable stock and water, either way you're going to end with two cups of liquid. Then you add a small parmesan rind letting it come up to a boil, then add in your pastina waiting for about a minute for it to get a head start in cooking, once the pastina is in and had a chance to cook for a minute or two, then you add the beaten egg with the one teaspoon of water in the beaten egg you want to be stirring continually as you're adding the beaten egg into the pasta in a mixture. Literally that's all there is to it because pastina only takes about 3 minutes to cook for the actual pasta so that's why once you get the egg in, that's it you turn off the stove it's ready to serve. I like to finish my pastina with grated Parmesan on the top and maybe a little butter because everything is better with butter, but my grandmother used to like it with a little olive oil on the top. And that is how you make traditional pastina that my grandmother always made for me when I was sick specifically when I was sick. To this day if I'm having some kind of digestive issue or a little bit of a stuffy nose or I really don't feel like doing a whole lot of cooking I will make the pastina soup because it literally takes less than 5 minutes to make on the stove if you have a gas stove, on an electric stove it takes a little bit longer simply to bring the water up to temp but the cooking time for the pastina does not change.
