Pizzaβs origins go back thousands of years. Flatbreads topped with ingredients were common in many ancient civilizations, including Egypt, Greece, and Rome. The Greeks and Romans, for example, ate flatbreads with olive oil, herbs, and cheeseβsimilar to what we now call focaccia.
Birth of the Modern Pizza in Naples
The pizza we know today was born in Naples, Italy, in the 18th century. At the time, Naples was a busy city with many poor workers who needed cheap, filling food. Street vendors sold flatbreads topped with tomatoes, which had recently been introduced from the Americas. These early pizzas were simple, often topped with garlic, lard, and basil.
The Margherita Pizza Legend
In 1889, Queen Margherita of Italy visited Naples with her husband, King Umberto I. A famous pizza maker, Raffaele Esposito, created a special pizza for her using three colors of the Italian flag
