Pork Rib Rosticciana are an Italian style of preparing ribs, traditionally from the Tuscany region where they would be cooked over a wood fire.

The dry rub:
2 tbsp fennel seeds
1 tbsp fenugreek seeds
1 tbsp of dried orange peel
1 tsp of black peppercorns
1 tsp salt
1 tbsp of dried thyme

The utensils I’m using are the Blanc Creatives carbon steel 9″ pro skillet, and Steven Raichlen’s Tuscan Grill.

The wine is a 2019 Passopisciaro Contrada C, Terre Siciliane

When handling pork, you should take precautions to avoid cross-contamination. This includes washing hands, using separate utensils, and storing pork properly.
