Hello folks!

Today I made cauliflower cheese…such an easy recipe and one of our favourites 🙂 You can jazz this up with all sorts of things, but I’ve kept it very simple in this video.
Perfect as a side, or on it’s own.

What I used –

* 1 Large Cauliflower | 675g (1.8 lb)

* Butter | 40g (1.5 oz)
* Plain/all purpose flour | 40g (1.5 oz)
* Whole milk | 450ml (16 fl oz)
* Cheddar cheese | 115g (4 oz)
* Ground nutmeg | 1/2 teaspoon
* Mustard | 1 – 2 teaspoons – optional

* Parmesan | 1 tablespoon
* Salt & pepper to taste

  4. Oh Cheryl , that looks wonderful , never thought of using nutmeg and French mustard clever idea , when you mix the butter with the flour it is called a roux , another wee tip , Mary Berry adds warm milk to make the sauce , combines easier apparently 😊❤😊❤😊

  6. Cauliflower cheese – if you’re one of those people who doesn’t like cauliflower, that might change your mind – if only someone could do something similar with several of the other banes of life in schools for people I knew at school – such as cabbage, broccoli, spinach and sprouts!

    Actually, broccoli is similar to cauliflower – you could try broccoli cheese – not sure about cabbage cheese, spinach cheese or sprout cheese – interesting idea!

  7. What a perfect side dish, especially for cold weather. Do you ever use some of the cauliflower water for the sauce?

  8. Adding the salt into the boiling cauliflower only at the last 5 mins is the top secret method Cheryl but promise i will keep it hushed up and not tell anyone

  11. I’m wondering how much water the cauliflower is retaining…does keeping it warm in the pan while you’re making the sauce drive some of the moisture out?

  12. I love cauliflower cheese. When I was young Mum used to make it to have with corned beef. I, over the years, have transformed it into a meal on it's own sometimes adding small bits of ham off the bone or, as you do, macaroni. Yours looks so tasty. You have put me in the mood for cauliflower cheese.

  14. I always used to cook the cauliflower whole so it didn't go mushy. I haven't made it for years. Im thinking I'll probably make it again soon.

  15. I absolutely love your recipes and cooking style. But just a wee disclaimer (DEFINITELY NOT A CRITICISM) , Parmesan Cheese in those wee shaker bottles is vastly different to Parmigiano Reggiano. If you can try it with that and then top with some breadcrumbs, then that's how I would make it. Well done on showing folk that making a rue is very easy.
