If you make tofu from pumpkin seeds, it coagulates nicely on its own.
Rennet fun fact: today, virtually all rennet in cheese production is made from the fermentation of genetically-modified bacteria! They figured out how to put the gene for chymosin (which is the "active ingredient" in rennet) into E. coli, which produces tons of it without having to slaughter a bunch of livestock. We get insulin from the same process – before, we had to harvest it from pig pancreas; now, we use bacteria.

I so enjoy your videos. You make cooking look a lot easier than I find to be! I love the History sections. You put so much research into each episode. I am not a real history nerd, but I love the stuff you come up with and especially appreciate the way you present it, the way you pronounce words in other languages! You wouldn't happen to be interested in narrating audio books, would you? You have a lot filler by the stove in your kitchen? Have you been finding it to be worth it? Was considering one, but people have complained that they regret it because you need to go to the sink to drain your pasta and such anyways. So a pot filler (whose purpose is to avoid needing to go to the sink) ends up being pointless.

17:20 Regarding Augustus's tendency to not eat during his feasts, I feel that is pretty classic host behaviour. All too often, you are busy entertaining your guests and making sure they are enjoying themselves, that their food is alright, and aren't left wanting.
