Today, we’re making a delicious savory rice pie (Torta di Riso), a traditional recipe from Liguria Italy, my home region! Specifically, this dish comes from Genoa, and it’s a true classic of Ligurian cuisine.
The first time I tried it, I instantly loved it! As a Filipino and a rice lover, I knew right away that my fellow Filipinos and Asians in general, would enjoy this dish too. 💛🍚

Ingredients
For the Pasta Matta
300g strong flour (Manitoba or bread flour)
165ml water
15ml olive oil
salt to taste
for the filling
200g uncooked rice
900-1l whole milk
200g ricotta
2 eggs
100g Parmigiano
nut meg
marjoram
salt and pepper to taste
