Recipe:
2 lbs ground beef
2 cups white rice cooled
Home Canned Tomatoes ground with an immersion blender OR 1-2 Jars Tomato sauce
4-5 eggs
Garlic, Seasoned salt, and Seasoned Pepper to your liking
1- 1 1/2 cups Italian seasoned bread crumbs.
6-8 Bell Peppers
Mix ingredients all together well, add 1/3 sauce to mixture.
Stuff hollowed out Peppers with mixture. Put remaining sauce in Casserole dish. add peppers to casserole dish and cover tops where meat mixture is on top with ladle of sauce
Bake in 350° oven, uncovered, until cooked through. About 1-3 hours, depending upon number of peppers you are making.
Easy, simple dinner that takes about 15 minutes prep time. Freeze any remaining mixture in foodsaver bags or airtight containers.
