Description
2 boneless, skinless chicken breasts
2 tbsp olive oil
2 tbsp unsalted butter
4 cloves garlic, minced
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
½ tsp red pepper flakes (optional)
½ cup cherry tomatoes, halved
¼ cup fresh basil, chopped
¼ cup grated Parmesan cheese
¼ cup chicken broth or white wine
Instructions:
1. Prepare the Chicken: Pat the chicken breasts dry with a paper towel. Season both sides with salt, black pepper, and Italian seasoning.
2. Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Sear the chicken for 5–6 minutes per side until golden brown. Remove and set aside.
3. Make the Garlic Butter Sauce: Lower the heat to medium, add butter and minced garlic, and sautefor 1 minute. Pour in the chicken broth (or white wine) and let it simmer for 2 minutes.
4. Add Tomatoes & Simmer: Toss in cherry tomatoes and cook for another 2 minutes. Return the chicken to the skillet and let it simmer for 5 minutes until fully cooked (internal temp: 165°F).
5. Finish with Basil & Parmesan: Sprinkle fresh basil and grated Parmesan cheese over the chicken.
6. Serve & Enjoy: Serve warm with pasta, rice, or roasted vegetables.
