Shrimp Pasta in UNDER 12 Minutes recipe
Ingredients:
2 lbs Wild caught shrimp (peeled and deveined)
2 cloves garlic (minced)
1 stick Irish butter (or grass-fed butter, sliced)
Fresh parsley and/or 2 Tbsp dried parsley
Pink Himalayan salt (shake all over)
2 dashes red hot chili pepper flakes
Black pepper (ground, to taste)
1 box of brown rice pasta (I like Jovial brown rice spaghetti since it is more gentle on my glucose levels)
Instructions:
1. Cook the pasta al dente in a large pot of boiling water. Stir often. (Approximately 10 minutes, which is 1 less minute according to the package instructions.)
2. While the pasta is cooking, in a large non-stick pan, add the butter, garlic, chopped parsley, shrimp, salt, hot pepper flakes & pepper. Cook on medium heat until shrimps are cooked & no longer pink (approximately 5 minutes). You don’t want to overcook the shrimp since it gets too chewy.
3. When shrimps are cooked, then add the cooked/drained all dente pasta, and cook on high heat for 1 minute tossing them together the whole time. Serve immediately topped with parsley (and more salt/pepper to taste if needed). It goes great with a side of buttered brocolli or other sautéed vegetable.
