Today I’m sharing a recipe for veal osso buco. It’s on the list of the best Italian dishes. Osso buco is a slow-cooked veal shank until the meat is tender. The meat is rendered extra soft because it falls apart into individual fibres! Even very tough meat cooked in this recipe will melt in the mouth. During cooking, you get a very tasty sauce – a combination of onions, meat juice of vegetables and spices, and most importantly, this meat is very easy to prepare. I definitely recommend trying this recipe, very, very soft and tasty meat is guaranteed!

So, we need:

– Osso buco – 2 big ones
– Onions – 5 pieces
– Carrots – 3 pieces
– Tomatoes – 4 pieces
– Paprika – 2 pieces
– Garlic – 4 cloves
– Dill, parsley, green onion
– Salt, pepper, coriander, honeysuneli (optional).

We cooked meat in an Afghan cauldron but you can take a pot with a thick bottom. You can cook it on a fire or a cooker. Braise until the meat is ready.

Method:

1. Wash and dry the meat well.
2. Cut all the vegetables into fairly large pieces (as in the video) and arrange in layers:
– 3 chopped onions
-garlic
– meat
-salt, spices
– 2 onions
– carrot
-tomatoes
-salt, spices
-paprika
– herbs

3. Cover the Afghan cauldron (pot) tightly and put on the fire for 45 minutes, if you are making in a pot with a thick bottom, the time increases to 90 minutes.
4. Serve with mashed potatoes, polenta, pita bread. Be sure to sprinkle fresh herbs on top.

This meat is unbelievably delicious!
