Zucchini is such a convenient and delicious vegetable. It is inexpensive, and you can find it year-round. In this delicious and simple recipe, the zucchini is baked into a parmigiana but does not have the traditional frying step. I like using a large baking pan and making just one layer; this way, the zucchini will dry up more in the oven, and you will have more of the crispy cheese top, which everybody loves. Buon Appetito! #LidiasRecipes #LidiasItaly #LidiasKitchen #LidiaBastianich #ItalianFood #FromLidiasTableToYours #LidiasSoundtrack

  4. Wow! That looks so delicious! unfortunately it has way too much fat for our dietary requirments – so we could never eat it. So sad. Lidia, you are an amazing chef – might you consider writing a few recipes and making a few videos for your over 55 audience who are watching thier fat and sugar intakes?

  5. Instead of using Lots of traditional bread I suppose you could use keto bread to avoid the Massive Carb Spike for those who are Health Conscious.

  7. Looks heavenly! I can eat both zucchini and fresh tomatoes, but not gluten bread, so a little bit more work but I think it will be worth the time! A keeper! Thank you Lydia for showing us how!

  8. We do a version of this with our zucchini. Quick question – what pan do you use that's deep enough to bake it?
