pecorino to the cheese mixture is the only thing missing. Otherwise, this is top tier manicotti. He even added the nutmeg and spinach. It's a little different with the sausage (more like a cannelloni because of the meat) but a great simple dish that's tasty

Manicotti is the Italian-American version of Cannelloni, which is the original Italian recipe made with rolled sheets of fresh pasta rather than tubes of dried pasta.
Cannelloni was the dish my mother made for us fifty years ago, with spinach pasta she made from scratch and a filling of veal, pork, and spinach she disgorged of water in a hot pan, bound with besciamella densa and seasoned with freshly-ground nutmeg and black pepper. The topping was her tomato sauce with patches of the besciamella densa. God, what a memory!
