A long long long time favorite and a top request from so many of you to share every year so here’s a reminder that this spectacular recipe exists! So easy and so delicious! The written recipe calls for cooked chicken but if you are using raw, start with 8 cups of water, add the raw chicken and let it simmer and reduce for about 30ish minutes till the chicken is cooked through then shred the chicken.

RECIPE:
1 Yellow Onion, diced
2 Stalks of Celery, diced
2 Carrots, peeled and diced
2 Tbsp of Olive Oil
¼ cup of All Purpose Flour
6 cups of Chicken Stock
½ cup of Heavy Cream
1 lb of Potato Gnocchi
1 tsp of Italian Seasoning
2 cups of Cooked Chicken
3 cups of Baby Spinach, roughly chopped
Salt and Pepper to taste
Freshly Grated Parmiggiano Reggiano

  4. Made this tonight. Was super tasty – hubby liked it as well. I'm not sure if I'm sold on the gnocchi yet – they got pretty gummy. Will try with a different brand, but might end up just using pasta instead. The base recipe is sticking around for sure. I loved how easy it was.
